Wholemeal Oat Banana Cake

Dont wish to eat too much carbon? This Wholemeal Oat Banana Cake is a great example for a sustaining and wholesome yet truly delicious afternoon treat. If you want a proper piece of cake without all that guilt, this one is specially for you.

Ingredients:

200g wholemeal wheat flour

50g oat bran

2 tsp baking powder

100g light muscovado sugar

100g softened butter

2 eggs, beaten

3-4 very ripe bananas, mashed​

1 tsp vanilla essence

1 tsp cinnamon

80g coarsely chopped walnuts (optional)

2lbs loaf tin, lined with baking parchmen

  • Preheat the oven to 180c (160C fan).

  • Mix together all the ingredients but the bananas and the nuts. You can do this easily with a hand mixer.

  • Blend in the mashed banana with a wooden spoon or a fork. Then add the nuts if using.

  • Spoon into the loaf tin and smooth over. Bake for approximately 45-60 minutes - the cooking time depends on the shape of the loaf tin and your oven. Start testing with a skewer after 40 minutes. You might need to cover the cake with some foil halfway through to avoid the top from overcooking.

  • Leave to rest for 5 minutes in the tin before turning the cake out and leave to cool on a wire rack.
