Miss the DANCING CRAB so much, so today I make the crabs dancing with their kawan, prawn, lala and corn at my house. No folk and spoon, we are expected to get in a mess, that's all part of the fun. Finger-licking good, literally. My kids give my utmost tribute and applause, wow! They are making me dancing ecstatically! Woohoo!
想念dancing crab (店的名称),所以今天我来个螃蟹与它们的好友、 虾、 啦啦和玉米一起共舞。没有叉子和勺子,热乎乎一锅上,欢乐的气氛扑鼻而来, 已经准备手沾满了辣椒酱,直接用手抓就可以吃了,吃得乱七八糟的, 这就是一种乐趣。我的孩子们禁不住给我掌声,哇 !他们这一举动让我欣喜若狂地忍不住跳舞也!呜呼!
Seafood paradise
Ingredient (A)
5pcs Red Chilies
3pcs chili padi
10 pcs dried chiles (soak with water)
2 pcs fresh tomato
4 slices galangal
6pcs shallots
1pc big onion
8pcs garlic
1 stalk lemongrass
6pcs candlenuts/ macadamia nuts
Juice from 1 green lime
Ingredient (B)
6 tbsp cooking oil
2 tbsp belacan
1tsp taucheo (soy bean paste)
3 tbsp raw sugar
1 tsp sea salt
5tbsp ketchup
1 cup water
1 egg
1 stalk scallions
Ingredient (C)
2 pcs crabs
½ kgs prawn
½ kgs lala (clam)
1pc steam corn (cut into pc)
Method
Clean the crab and chop it into pieces, prepare prawn, lala (soak water with sea salt for at least one hour)and steam corn.
Blend ingredients (A) into a chili paste, make sure that the spice paste is finely blended or pounded.
Pour 1tbsp of cooking oil into the wok, fry the crab and prawn a while (The color turn to a bit red will do)
Heat up a wok and add the oil. When the oil is heated, add the spice paste and stir fry until aromatic .
Add taucheo & sugar & salt
Fry a while and then add Ketchap
Add ingredient © and stir fry for a while
Add water and cover with wok cover, continue stirring for about 2 minutes or until all crabs, prawns pieces turned red and lala shell open widely.
Break eggs into the wok and streak with a fork, simmer till cooked. Squeeze lime juice (optional) over and stir in scallions.
Dish up, garnish with chopped scallions and serve hot.
海鲜拼盘
(A) 材料
5 条 红辣椒
3 条 小辣椒
10 条 干辣椒 (用水浸泡)
2个 新鲜番茄
4 片 蓝姜
6 颗 小葱头
1 个 大洋葱
8辩 大蒜
1 根 香茅
6 颗 石栗/ 坚果
1 粒 青柠汁
材料 (B)
5 汤匙 食油
2 汤匙 峇拉煎
1 茶匙 豆酱
3 汤匙 赤糖
1 茶匙 海盐
5汤匙 番茄酱
1 杯 清水
1 个 鸡蛋
1 根 青葱
材料(C)
2 只 螃蟹
½ 公斤 海虾
½ 公斤 蛤蜊
1 个 蒸玉米 ( 切段)
作法
1. 清洗好螃蟹,斩成大块,拍碎蟹钳。,准备清洗虾,蛤蜊 (之前放盐浸水至少一个小时), 滴干水份放在盆里和蒸玉米。
2. 材料A用食品料理机打成泥
3.倒入 1 汤匙的食油入锅内,煎蟹和虾,颜色有点红即可
4.烧热炒锅,添加食油。当食油加热时,加入香料酱炒香。
5.添加豆酱 , 赤糖与海盐
6.炒一会儿,然后添加番茄酱
7. 过后除了玉米添加 全部材料(C)
8.添加水,盖上镬盖,继续搅拌约 2 分钟(翻转时候动作要轻,不要让肉掉下来)等螃蟹, 虾都变红了与蛤蜊开嘴的时候,放入玉米再炒片刻。
9.这时在酱料中打入鸡蛋(不要打散),放入锅里后朝一个方向不停搅动,把鸡蛋打成蓉状即可。 放一些青柠汁 (可选)
10.上菜,饰以切碎的葱花,趁热食用。
