SWEET AND SOUR PORK RIBS


糖醋排骨

(食谱取自 Janice Teo, ) 材 料 : 500 排骨 (剁块 ) 1 条 红辣椒 ( 剁碎 )(我没放) 5 粒 蒜瓣 ( 拍扁 ) 腌 料 : 1/2 大匙 麻油 1 大匙 花雕酒 1 /4小匙 胡椒粉 1 大匙 薯粉 酱 料 ( 拌 匀 ) : 1 大匙 蜜糖 1 大匙 鱼露 1 大匙 糖 1/2 大匙 黑酱油 1 1/2 大匙 黑醋 2汤匙 清水 1 /4小匙 胡椒粉 做 法 : 1 - 将排骨加入腌料拌匀,包上保鲜摸,放冰箱腌至 3小时 。 2 - 预热一杯热油 将排骨放入以大火炸熟至金黄色 , 捞起 , 沥干油 , 备用 。 3 - 镬里留1大匙热油 , 加入红辣椒末和蒜瓣以慢火 炒香 , 加入混合酱料 , 改用中火拌炒均匀 。 4 - 拌入炸过的排骨翻炒至乾 , 即可上桌 。 Sweet and sour pork ribs (recipe by Janice Teo) Ingredient: 500 pork ribs (cut into pc) 1 red chili (chopped) (I didn't add) 5-grain garlic (flatten it) Marinade: 1/2 tablespoon sesame oil 1 tablespoon Hua diao wine ¼ teaspoon pepper 1 tablespoon tapioca powder Sauce (mix together): 1 tablespoon honey 1 tablespoon fish sauce 1 tablespoon sugar 1/2 tablespoons dark soy sauce 1 1/2 tablespoon black balsamic vinegar 2 tablespoons water ¼ teaspoon pepper Method 1- Marinade the ribs, wrap with plastic wrap and chill for at least 3 hours. 2- Deep fry the ribs until golden brown, remove and drain the oil, and set aside. 3- Put one tablespoon of oil in the wok, add the red chili and garlic to stir fry, add sauce and ribs, stir fry evenly until the gravy going to dry then can be served.
